This ended up being kind of a peaceful day, in spite of it being a P.A. Day at school. Nate was invited to go play at Sky Zone with his friends, so while he did that, I got caught up on the laundry and started to watch The Kids Menu on Netflix Canada (I have a habit of watching documentaries while I fold laundry…that and old episodes of ER).
Here’s what I ate today.
Breakfast: Coffee with Silk Almond hazelnut coffee creamer. Silk coconut yogurt with blueberries, banana, chia seeds and a sprinkle of cinnamon.
Snack: Piece of sprouted grain organic whole wheat toast (I forget the brand but it comes from Costco) with almond butter and cacao chips on top. Glass of cashew milk.
Lunch: Zesty Sweet Potato Soup
Snack: Pretzel chips with hummus. Two mini corn dog muffins with mustard, made with the recipe from Sarah’s Vegan Kitchen (Nate loved them).
Dinner: Big garden salad with homemade honey dijon vinaigrette dressing. Baked no-oil fries with a side of All-purpose Vegan Gravy from Oh She Glows.
Graham is coming around after last night’s viewing of The C Word. He’s started to read labels and today we were baffled by the inclusion of silicon dioxide in our bottle of Kraft salad dressing. It’s used in the production of foods but also in the construction industry. We decided not to put it in our bodies until we learn more, so I made the homemade dressing, which I liked better, anyway, instead.
